頂級的義大利硬質起司，依照製作過程跟熟成期不同，區分為各種等級，其中最頂級的義式硬質起司稱為「帕米吉安諾 Parmigiano Reggiano」，一天只製作一次，熟成期長達18 個月以上，再者為熟成14 個月以上的「帕達諾起司Grana Padano」，兩者皆有義大利原產地D.O.P 認證。
